Title: Lemonade Bar Cookies

Yield: 32 Servings

CRUST
1 1/2cSelf-rising flour
3/4cQuick Oats oatmeal
1cPromise ultra fat-free
  Margarine
1/2cPowdered sugar
TOPPING
4 Egg Beaters (1 cup)
2cSugar
1cnLemonade (undiluted) 6 oz.
1/2cFlour
1/2tsBaking powder
  1 or 2 Tbs. powdered sugar
  For dusting after baking

Blend crust ingredients. Pat into a 9 x 13-inch pan that has been sprayed with a non-fat cooking spray. Bake at 325 degrees F. for 20 minutes. Beat together topping ingredients. Pour onto crust. Bake at 325 degrees F. for 20-30 minutes. Cool and cut into bars. Dust with powdered sugar.

Note: You can use regular sugar or powdered sugar for the topping in this recipe. The bars are more fluffy when using powdered sugar. If you want more of a lemon chess pie taste, use regular sugar in the topping.
